Someone You Should Know

Beth Lulinksi, Assistant Director Dietetic Internship Program, FCNS
Beth Lulinksi, assistant director of the dietetic internship program in the School of Family, Consumer and Nutrition Sciences, is a clinical dietitian specializing in eating disorders and adolescent nutrition. She joined NIU in November 2000.
What are the responsibilities of your position? I teach a workshop for dietetic interns and supervise and evaluate their learning experiences on campus and out on site. I also spend my time developing new learning modules and evaluation tools.
How did you choose your profession? My mother was a nurse and she encouraged me to check out the profession of dietetics. It was the perfect choice for me.
What's the best part about your job? The best part of my job is working with the interns. They are so enthusiastic and eager to become dietitians. Working with them reminds me of why I chose this field and renews my enthusiasm.
What's something unique about your position? I commute to various sites including hospitals and the NIU dining halls to work with the interns and their preceptors.
If you weren't in your current job field, what would you be doing? I would be teaching music or doing some work in the creative arts field.
What are you reading? I love to read and usually don't put the book down until it is finished. Lately, I have been reading John Grisham books, but I always start my day with some quiet time reading the Bible.
What music are you listening to lately? I have a 40-minute commute so on the way I like listening to the new Christian station 106.7 The Fish or any 80s retro.
What good movies have you seen lately? I like any romantic comedies—I recently rented "Chocolat," which was delightful.
Do you have a favorite TV show? I like to watch the Food Network or Home and Garden TV.
