Caitlin Jones
General Manager

Caitlin is a nutrition and dietetics major at NIU.  She has been a very competitive athlete all her life which has helped her learn the value of healthy eating and leading a healthful lifestyle.  After earning her degree, Caitlin hopes to help others achieve their personal goals in healthy living and looks forward to working with all types of people.  Caitlin hopes everyone is excited about our Cuban menu as she is and looks forward to seeing everyone at Cocina Cubana!

Saadia Ahmad
Executive Chef

Saadia is from Tinley Park, Illinois and is in her first year at NIU as a transfer student. She chose the nutrition and dietetics field because it uses science in a readily applicable form. Saadia sincerely hopes you enjoy our delicious cuisine!

Kaylee Libby
Sous Chef

Kaylee is from Rockford, Illinois and is a nutrition and dietetics major at NIU.  Kaylee chose this major because she loves learning about health and how to take care of our bodies.  She is most interested in sports nutrition.

Martha Vargas
Garde Manager Chef

Martha, born in Fresno, California and now from Elgin, Illinois is currently a senior studying nutrition and dietetics at NIU.  Martha decided to go into nutrition because she loves dealing with people and their health.  When one of her family members became diagnosed with diabetes, Martha became even more interested in nutrition.  Helping people make better food choices is something she has wanted to do for a very long time!  Martha loves spending time with her friends and just hanging out.  She is also a big family person who thinks that having a loving family is the biggest treasure a person could ever have.

Carlie Czarnota
Marketing Manager

Carlie is originally from Plainfield, Illinois and is a post-grad student majoring in nutrition and dietetics at NIU.  She holds a B.F.A. in Dance as well as a B.S. in Sociology from the University Of Iowa.  After some time away from academics, Carlie decided to pursue her desire to gain more knowledge of the nutrition field and plans to work as a registered dietician after graduation. 

Andrea Morley
Dining Room Manager

Andrea is originally from Oak Park, Illinois and is currently in her junior year at NIU as a nutrition and dietetics major. Andrea began considering a major in nutrition while at Eastern Michigan University and after taking a class specifically geared towards teaching students about careers in dietetics and nutrition as well as a biology class with an amazing teacher who got her to love biology she finally decided to declare nutrition/dietetics as her major. After graduation Andrea hopes to complete a dietetic internship, earn her masters, and become a registered dietitian. While she is not yet set on a field of nutrition that she would like to work in, she is currently considering community and sports nutrition
