Lili Nevarez is the General Manager at Mediterranean Fusion at Ellington’s. She is a junior majoring in Nutrition and Dietetics and plans on graduating in May of 2015. Leading a healthy lifestyle is very important to her and she encourages others to do the same by adapting to a diet that emphasizes on fruits, veggies, whole grains, beans, nuts, legumes, olive oil, and flavorful herbs and spices. At Mediterranean Fusion you savor the experience of a Mediterranean diet.
Andrew Fernandez is the Executive Chef of Mediterranean Fusion at Ellington’s. He is a junior majoring in Hospitality Administration and plans on graduating in the summer of 2015. Mediterranean style food is something that he grew up with. His mother came to the United States from Greece when she was 12 years old and he has always been eating Greek food for as long as he can remember. He is excited to provide our clientele with exceptional Mediterranean food given his knowledge and background. After college, he plans on acquiring some type of management position in the restaurant/bar industry to gain insight an experience for his ultimate goal, opening his own bar. He is looking forward to this semester and hopes to see you here at Ellington’s. Don’t forget to stop in for Mediterranean Fusion, March 25th and April 22nd!
Jenni Roussel is the Sous Chef of Mediterranean Fusion at Ellington’s. She is a junior majoring in Nutrition and Dietetics. Cooking and baking has been a passion of hers since childhood. Fitness and healthy eating is part of her daily routine and upon graduating, she hopes to share her passion for a healthy lifestyle by helping others achieve theirs. She welcomes you to come and explore the wonderful flavors of Mediterranean cuisine.
Lindsay Kellner is a junior here at Northern Illinois University. She is planning on graduating in May of 2015 with a degree in Nutrition and Dietetics. Her career goal is to become a registered dietitian so she can pay it forward and help people achieve their goals and become healthier, just like she did! She loves to try new foods and is really excited about showing Ellington's guests how exciting Mediterranean food can be! She hopes you enjoy the food as much as she does!
Kara Ritchason would like to welcome you to Ellington's! She is a senior Hospitality Administration major here at Northern Illinois University. Kara plans on graduating in May of 2014. Her ultimate career goal is to become an event planner. She is very outgoing and she loves working with people. The service industry is a perfect fit for her! Kara is the dining room manager at Mediterranean Fusion at Ellington’s. For the restaurant we hope to bring the diverse flavors of the Mediterranean cuisine to Ellington’s. She loves to try new and different foods. She thought it was really exciting putting together a menu of different Mediterranean food, because it was somewhat new to her. Kara not only wants to better her service and management skills but also to learn new innovative ways of cooking in the kitchen. Working in Ellington’s will give Kara greater experience and knowledge of the restaurant industry. It is Kara’s job to make sure not only the customers are enjoying their lunch, but also having a wonderful experience. The Mediterranean Fusion hopes that you enjoy their menu as much as they did!
Christina Meyer is a junior at NIU and is studying Nutrition and Dietetics. Christina is a part of the Student Dietetic Association on campus and plans to get her personal training certificate this summer. She has a passion for health and wellness and she cannot wait to prove it to the world after graduating in May of 2015.
