Katie Kelly 

Hi! My name is Katie Kelly and I am the Executive Chef for Greek Kouzina at Ellington’s. I am a senior at Northern Illinois University majoring in nutrition/dietetics. I will be graduating with my degree in spring 2013, and then I plan on going on to become a Registered Dietician. I enjoy cooking and eating culturally diverse foods and will always be open to trying something new! I hope that everyone will enjoy their Mediterranean experience at Greek Kouzina.

Luis Cervantes

Hello my name is Luis Cervantes and I am a senior graduating this semester with a Hospitality Administration degree and minor in Business Administration. My goal for the future is to become a general manager of a hotel or casino one day. The main company I would like to work for is The MGM Grand Hotel and Casino in Las Vegas because of opportunities it will open up for my career in the Hospitality Industry. An interesting fact about me is that I love to dance and compete in strolling competitions for my fraternity.

Lauren Oppe

Hello my name is Lauren Oppe. I am currently a Senior at Northern Illinois University and will be graduating with a degree in Hospitality Administration in May of 2013. I am extremely excited to bring you our Greek menu. Before this course I did not know much about Greek cuisine and have learned many things about it, most importantly that it's delicious! I hope you all enjoy it as much as I do.

Sara Rose Snelling

Hello! My name is Sara Rose Snelling. I am a Dietetics major at Northern Illinois University, and the General Manager of Greek Cousin at Ellington’s. After I complete a Master of Science degree in Nutrition and Dietetics, I would love to use my experience to educate and create inspiration for a more healthy lifestyle within my community.

I have very deep passion for food and feel that in addition to the sustenance we obtain from food, it is also a great tool for artistic expression. I enjoy any day I can go wander through the local farmer’s markets, bring fresh foods home and spend my afternoon creating a meal. I am very happy to be able to create delicious meals to share with our guests!
