You can earn one credit hour for working three mandatory events, plus an additional 48 hours through the semester. Earn up to 3 credits hours/semester.

Course Description:

Application of principles of food preparation and food service management to quantity food production and service, in catering.

Required Materials:   

  • Uniform (Chef’s coat & pants)
  • Pocket thermometer
  • SDHA nametag

Course Objectives:

Upon completion of this course, students will be able to:

  • Demonstrate a working knowledge of the principles of food science and  techniques of food preparation by following standardized recipes and cooking and analyzing quantity food items for resale in the CDR.  
  • Demonstrate the ability to effectively manage human resources by planning, staffing, supervising, and evaluating performance of student staff for special events in the CDR.
  • Demonstrate the ability to procure food and to manage food production and presentation, distribution and service by writing order sheets, production sheets, and evaluations for a specified menu.  
  • Promote and merchandise specified food and nutrition services provided within the CDR operation and catered events to the university and community as a whole.  
  • Demonstrate the ability to analyze the cost/profit ratio within the CDR.

Grading

Students will be required to work three additional events throughout the semester (TBA). Students will be required to work at least two weekend events. Above and beyond those hours the students will be required to sign a contract for the grade, which they choose to receive.
